Beat 2 T. butter (softened) and 3 T. strawberry- peach preserves (from Strawberry Fields) until fluffy; set aside. Add 1 T. strawberry-peach preserves to egg mixture, proceed as directed.
1/4 cup 2% milk
1 tsp. vanilla extract
4 slices french bread (1/2 inch thick)
1 T. butter
Maple syrup (optional)
In a shallow bowl, whisk the egg, milk and vanilla. Dip both sides of the bread into egg mixture.In a large skillet, melt butter over medium heat. Cook bread on both sides until golden brown.Serve with the Strawberry Peach Butter and syrup if desired. You might like to add some fresh slices of strawberries and peaches on top and sprinkle a little confectioners' sugar too.
